I made the first entry into this months challenge, the Thai fried rice. It’s deffinitly hard to do without a wok. The wok allows you to use very high heat but at the same time allows you to quickly move your food off of the heat. When I use a normal pan I turn my burner as high as it goes and keep rotating the pan on and off the heat to mimic a wok as best I can. You just keep cycling the rice on and off the heat again and again and again. I’m actually ordering a wok on Monday to make cooking my rice cooking easier.

Hard as fuck for me without a tall walled pan because shit goes everywhere. Hard to keep things in the pan when you’re constantly flipping the rice. The other anon will have an easier time with that dope pan he has. Don’t get me wrong, you can make it without it, it’s just harder and more messy. You can see what I go through in this infographic. With a normal pan I have to resort to cooking things somewhat independently because it’s impossible to fit everything in and actually get it to properly cook. When I get my wok i’ll be able to do it a more traditional way.

That pan really is lovely. It's the closest thing to a real wok I can use effectively on those induction plates, so I was happy when I found it. DeBuyer calls it a "country pan", whatever that means. Only downside is that I'm often struggling with food sticking too much, no matter how furiously I stir. Even with all the seasoning it has accumulated. I often resort to my cheap non-stick wok, which does the job very well too. It's not as high though, so stuff still escapes occasionally.
It could also be because I've only been cooking with Stargate SG-1, but I highly doubt it.

We can discuss the level of butchering skill involved in the dunking but it doesn't change that there are so many bones in that tiny thing. Every single part that you'd think maybe there'd be less bones like a thigh, there were 20 of them.

I imagine most restaurants refuse to do it on just prep time alone on handling those itty bitty bones regardless of the meat to bone ratio and/or whether the final dish will have bones in it. Might as well work a chicken instead.

The problem is people buy subpar ingredients, don't season it at all, and "mamma mia just letting the natural flavors do the trick"

It looks like in most videos he heats oil and then pours it into a bowl through a slotted spoon. It's to his left outside the frame of the camera. Is this being reused to lubricate the bottom of the wok between dishes? Is there foot pedal to control the heat? Does the water keep the surface cool?

I've worked in a lot of kitchens, and this style of cooking is by far the most efficient and varied I've seen. I wish I had this kind of kitchen in my house. I bet two or three people could meet all the demands of a kitchen like this for a bustling restaurant. I've worked shifts where we had 5+ cooks and nothing is happening. Nobody knows what their job is or how to perform it. One problem halts the entire operation. People get bogged down and stop functioning. It's embarrassing and frustrating.

I've made stir fries on an outdoor wok burner. I invited a bunch of friends and gave them little sheets of paper to check mark which ingredients they wanted, and had a small station like the one in the video. Pick a protein, three vegetables, and how spicy you wanted your sauce. There was practically no down time between "orders". Plates were flying out of the "kitchen" one after the next. One of the easiest clean-ups I've ever done, as well.

This is pretty much how all wok stations in Chinese restaurants work (at least in China), although the heat control is usually at knee-height so you use your knee to do the adjustments.

>you ought to get a taste of your own medicine
You enjoy the idea of a conscious being suffering because you think they deserve it.

The average modern carnivore barely even understands where their meat comes from, their consumption is thoughtless, whereas your malice is planned, considered and deliberate. You're the very psychopath you imagine you rail against.

>> No.12056260

I am not sure I believe that desu. You think there's much in the way of ethically farm raised endangered meat in Asia?

For my own mileage I am not sure how I feel about him obviously making a spectacle of killing animals on YouTube. I've hunted, I understand that death is part of food, but this guy is literally building YouTube fame off of killing small animals. That's kind of fucked up isn't it?

>> No.12056305

>>12056249
Who ever said I enjoy the idea of them suffering? I do enjoy the idea of their nonexistence, because then they aren't a threat, but I was using suffering for the sake of argument. If you're truly emotionless, you shouldn't be able to suffer, you shouldn't feel a damn thing. You're right that the average person is too ignorant to really be considered malicious when it comes to meat consumption, but there are still many, particularly outside of the west, who are not only keenly aware of the suffering they cause, but also getting a sick sense of pleasure from it, from the power they have when they do it. Not just over the animal either, but over the people they know they can illicit an emotional reaction from. Essentially, they're edgelords, and they use their edginess to justify sadism.

>> No.12056398

>>12056305
"Getting a taste of your own medicine" implies you think it would be a good thing for them to experience the pain - to me that suggests you'd enjoy that being enforced.

You understandably see sadism because it's the only way you can imagine yourself murdering animals, because you have gained the empathy and the choice not to. But it's not a binary, it's not a fight between edgy monsters who love killing animals and good people like you, it's an environment everyone is navigating. We are trying as a species to swim against a tide of nature, and kicking on the people below you isn't rising above it, it's just drowning someone else to give yourself a momentary breath.

This is why you don't get all your information from 4chan comments.

He doesn't show the killing onscreen if it's going to be too much of a spectacle like with the small mammals. Most of his videos are about using different ingredient and it's not limited to meat; there's cabbage, corn, tofu, garlic chives... dude has a whole page full of just egg recipes. The rest are vlogs about his wholesome family life with his daughter.

>Implying Wang is one of those people.

He clearly says you should let your supplier do the butchering if you do not know how to minimise unnecessary suffering and mess. He's just treating the animal as an ingredient, the sick pleasure power dynamic is in your head.

Go take your sadism argument to the people jacking off to cartel gore videos, most of whom are surprise surprise, in the developed west.

Shared for buzz on 4channel, a site where people get off on hunting for things that can be spun controversial for those elusive (you)s.

He's a 'literally who' in the real world. He started off on Weibo in China, most of his viewer are from China and they're watching for the cooking. The reason those viewers got riled up was because he used an endangered species not because he shows the before and afters of procuring meat.

People in the West are too used to their sanitized compartmentalization. One video of of some outdoorsy lady showing you how to kill a rabbit (https://youtu.be/Lz5Q9xJQt5E)) and someone else does the video on using rabbits in a recipe (https://youtu.be/UEu9YyROlnM)), but as soon as you put the two together in one video it's sacrilege and done for shock value? Just because you've willingly averted your eyes from the truth it doesn't mean it's not there anymore.
