I made the first entry into this months challenge, the Thai fried rice. It’s deffinitly hard to do without a wok. The wok allows you to use very high heat but at the same time allows you to quickly move your food off of the heat. When I use a normal pan I turn my burner as high as it goes and keep rotating the pan on and off the heat to mimic a wok as best I can. Hard as fuck for me without a tall walled pan because shit goes everywhere. Hard to keep things in the pan when you’re constantly flipping the rice. That pan really is lovely. It's the closest thing to a real wok I can use effectively on those induction plates, so I was happy when I found it. DeBuyer calls it a "country pan", whatever that means. Only downside is that I'm often struggling with food sticking too much, no matter how furiously I stir. Even with all the seasoning it has accumulated. I often resort to my cheap non-stick wok, which does the job very well too. It's not as high though, so stuff still escapes occasionally.
It could also be because I've only been cooking with Stargate SG-1, but I highly doubt it.

It looks like in most videos he heats oil and then pours it into a bowl through a slotted spoon. It's to his left outside the frame of the camera. Is this being reused to lubricate the bottom of the wok between dishes? Is there foot pedal to control the heat? Does the water keep the surface cool?

I've worked in a lot of kitchens, and this style of cooking is by far the most efficient and varied I've seen. I wish I had this kind of kitchen in my house. I bet two or three people could meet all the demands of a kitchen like this for a bustling restaurant. I've worked shifts where we had 5+ cooks and nothing is happening. Nobody knows what their job is or how to perform it. One problem halts the entire operation. People get bogged down and stop functioning. It's embarrassing and frustrating.

I've made stir fries on an outdoor wok burner. I invited a bunch of friends and gave them little sheets of paper to check mark which ingredients they wanted, and had a small station like the one in the video. Pick a protein, three vegetables, and how spicy you wanted your sauce. There was practically no down time between "orders". Plates were flying out of the "kitchen" one after the next. One of the easiest clean-ups I've ever done, as well.
