Honey is glucose and fructose.
Compared to the table varieties it has many impurities.
Honey contains many enzymes that aid in digestion, namely of sugar. Not surprising seeing as how bees are preparing it for storage and digestion while it is within them.

It's not less "processed".
Processed has become a buzzword that people use without understanding.
Some people even use it as a substitute for "refined". Well in the case of honey it is arguably more refined than granulated sugar. Honey is made up of monosaccaride molecules (fructose and glucose) while granulated sugar is made up of sucrose, which is a disaccharide and needs to be hydrolysed with enzymes in the body before it can be used by the body for energy.
Either way, they are both equally harmful in excess or if consumed by someone leading a sedentary lifestyle.
Honey does contain all sorts of other compounds that may or may not be beneficial for health.
