>a few times

This is how you end up with mushy rice. You need to rinse it until the run off is absolutely 100% clear, this can take 20 or 30 run offs, not a few.

>>12020234
BS. A few to 5 times is enough. It's all about temperature and moment.

1 rice
2 water
bring to boil
reduce heat to low and cover
simmer until water is absorbed, 10-20 minutes depending on amount of rice, (for my family of 3, 3/4 c rice + 1 1/2 c water, takes about 15 min.)

One serving of rice= 1/2 cup of dry rice. Keep in mind rice cooks at different times so there will be some error occasionally. I assume your making white rice by pic, so lets go with that.

Rice is 1:2 Ratio. You want a cup of rice? That will be two cups of water. Measure out a two cups of water, place in clean pot. Rice needs to taste good so i season my shit. Add some butter to prevent sticking, some salt, garlic powder, onion powder, a little curry if you want etc...You can also chop up some green onions and throw in there or jalepeno, it doesnt matter.
So cover pot with two cups of water, wait till it is boiling. Once boiling, run rice through water in a sieve and wash, it is done after thirty seconds. Put your one cup of rinsed rice in boiling pot, and immediately cover and place on LOW. Do not open the fucker for exactly 15 mins. Do not fuck with it at all. Once 15 mins is done, enjoy. Additionalyl i would suggest you look into "better than buillion" and chicken buillion for added spices in your rice.

When I cook rice it always ends up stuck to the bottom of the pot. So a few month's ago I started cooking it like pasta. Works well.

Do what >>12020063 said for bog-standard white rice, makes a nice side dish with a little butter on top.The ratio of water to rice is usually what he said unless a recipe specifically calls for a deviation, like when you make Spanish rice you use a 2-1 ratio instead of 1.5-1, use chicken stock instead of water, add some diced roma tomato, crushed garlic, turmeric, diced white onion, and a tablespoon or so of butter. For both of these methods you want a long-grain fragrant rice that's light on the starch. Basmati or Jasmine are good picks.

>> No.12021833

>>12021756
I believe sticky rice is usually short grain. I'm not 100% on this but from what I understand you don't rinse the rice, don't add salt, and you add a splash of rice vinegar to the water.
>>12021779
Knowing China and Japan they almost certainly have different varieties of rice they prefer, and probably argue over which is best. I know in a lot of import stores in America you can buy "sushi rice" which seems to be very short grain, almost round in fact.

I'm telling you, if you make it so that the run off is clear, you can just dump the rice in a pot of just simmered water for ten minutes and when you come back, it will be perfect every time, I mean 100% perfect, better than any other method.

rinse your rice
and i always add a crushed garlic clove and a bay leaf,
sometimes adding chicken stock bouillon to the cooking water too, just dialing back the salt in it.
