So I just got some venison from a friend and I have no clue what to make with it. It’s mostly grounded and backstrap

Just curious why you posted a pic of an elk and not a deer. IMO elk is much better than deer. For venison I like ti pan sear it, add onions, and then a cup of water to deglaze and then finish it off in the oven.

Elk are deer, elk meat is venison.

Elk meat is a lot closer to beef in terms of flavor and fat content than deer is.

I'm my area this is very true. We have mule deer that are basically trash eaters. They eat so much sage brush that it turns the flavor of the meat

Yeah and it’s all meat so I guess that means there’s no difference between any meat and you cook all animals exactly the same and specificity no longer matters.

It really doesn't, cervid recipes are more or less interchangeable across species, especially if he's just got backstrap and burger. Which cut of meat, how old the animal was, its sex and whether it was shot during the rut, diet, and how it was processed after being shot are all far more important aspects than species.

Grill the backstrap, use the ground in place of beef ground. Deer ground has a lot less fat though so things like burgers take more complex recipes because it doesn't stick together well. Other than that, just do normal shit.
