I grew up with Indian immigrant parents and as a kid I always fucking hated the regional variety of Indian cuisine I would eat (West Bengali fish-based cuisine).
Now that I'm in my 20's I appreciate North Indian and Pakistani cuisine a lot more. There's a certain art to perfecting meat curries and not just dumping all the spices possible into a dish.

First of all, India is a huge place with over one billion people, much diversity and historically been trading with all parts of the world.

Second is that Indian people are very family orientated and pass down recipes. This along with them being poor actually makes them less likely to live off crappy processed foods which are kind of bland and designed to appeal to everyone.

Finally, and this is something where I think most people can learn from, is that the vast majority of people are vegetarian and even those that aren't, don't eat meat very often (again, poorfags). Imagine how much more effort you would put into making great flavours if you couldn't rely on a delicious piece of meat?
