I did this in college when I worked at a Mexican place. I would put flour tortillas in the taco shell mold and dunk them in the deep fried for a few seconds. It was so good the manager actually put them on the menu.

Ranchera cut. Beer, crushed jalapeno, fresh orange and lemon juice, minced garlic and marinate for two hours. For salsa I put two tomatoes on the stove until they're burnt from all sides, same with serrano, I put some olive oil in the blender, some garlic, salt and blend. Then I put some tortills on the stove. make sure its the yellow cornmeal tortilla and not the white kind.

Ok constructive criticism. Dice the tomatoes rather than chunking them. This is entirely personal taste but I think there is something to be said for “layering” tastes. I notice you have cheese on several layers. I would personally prefer each ingredient on its own layer. At the end of the day this is subjective and to each his own. If that’s how you prefer your tacos who am I to tell you otherwise?

I go to the corner since I'm in mexico.
Usually I use lime and guac. I like spicy but in tacos I like the sour and salty taste better. Depending on the place I use different garnishes but mostly just lime.
