If you're still there. Try using some chipotle in adobo for some smokey flavor. If you're going to use whole beef instead of ground and simmer for hours, don't be afraid to use a lot of onions. We're talking like 2 whole sweet onions. Onions add depth of flavor.

I added brown sugar, apple cider vinegar, and cocoa powder. Fuck texas, It needs that sweet and sour to bring out that heat, and chocolate really works with peppers. Don't go dumping cocoa in, just a little. Like 2 TBS for a batch that includes 3 lbs beef?
