I've been using this for years. I'm pretty sure it's assuming that you're using tasteless McCormick cayenne pepper so if you're using real shit that actually has taste you should cut that amount in half unless you like burning shit.
I'd also reccomend brining the chicken and deep frying rather than pan frying.

I wouldn't go through all that effort making braised pork just to "toss is in barbecue sauce".

After shredding the pork and other ingredients, bake until crispy instead, one portion at a time.

Add sauce per serving, if desired.

heres a recipe for AUTHENTIC REAL NEW MEXICAN CHILE
>get red chile(perferably from lemitar) and use scissors to remove stems and seeds
>soak red chile in cold water until soften
>blend red chile with water until smoothe(feel free to add roasted garlic and/or onion in blender with it)
>in pot melt mantecca
>whisk in flour
>onced flour is browned and smells like pie crust slowly pour in blended chile while whisking
>add ground cumin and corriander and mexican oregano(greek oregano will do fine)
>let simmer for about 10 minutes
>taste for salt
and wala
instead of mantecca you can brown cubed pork and use whatever rendered fat is in pan but remove big pieces of meat before whisking in the flour so its easier to mix then put the meat back in when you add the blended chile
