I'm moving to an apartment with an electric oven. I have a butane burner so I can still roast vegetables and stuff, but I'll lack a gas broiler, which I use on meat. Will an electric broiler give me the same char on a tray of chicken thighs?

Look, the fundamental basics behind electric cooking is that the electricity will "jump" across all the various water molecules in the food, in effect steaming it while simultaneously dehydrating it. Ever see a person who's just been electrocuted, those thick plumes of "smoke" rising up from them? Yeah, that's water vapor is what that is.

As opposed to a nice flame roast that locks the juices and liquids IN the food, electricity is fucking garbage. No better than microwaving. You fucking plebeian.
