As a contribution for some real tacos, I will give you a recipe that you can make with sirloin meat

In a pan, fry the sirloin with a little butter (manteca inca is better), preferably the piece is less than an inch so that it does not take long to cook, the meat must be in a dark brown tone, NOT BURNED

almost at the end you put onion, cut into strips next to the meat, never put it at the beginning or it will burn too much.

remove the meat and onions from the pan and separate, place corn tortillas with the fat that comes from the meat and juices.

while the meat is minced, it can be with a knife, some have the crazy idea of using processors but I do not recommend it.

already minced the meat is placed in the corn tortillas and the onion

taco sauce
the sauce can use jalapeños (not of tin or in vinegar) that are cooked in water until taking an olive tone together with a tomato or two and two cloves of garlic depends on how spicy they want it.

put everything in the blender and put two tablespoons of salt.
