Why is pepper so ubiquitous? I understand seasoning most things with salt, but why is pepper its automatic companion? Why does every chef put pepper on steak like a reflex? "Make sure to taste for salt and pepper" is a phrase I hear a lot on cooking shows. Don't get me wrong, I love the stuff, but what gives?

Because, like salt, it's easy to get everywhere and makes food tastes better without being too extreme for the majority of palates nor does it conflict with most other herbs or spices you might add.

It’s just a fairly neutral spice, try replacing it with cayenne powder

Thanks for the exhaustive list. I'm printing and laminating this so I can hang it in my kitchen as a reminder.
