Mostly Japanese western-handle, a mix of semi-stainless, stainless, and carbon. A few wa handle. An antique French chef knife.

I have the 850 cleaver that I use to chop chicken bones. They chip once in a while but could easily be sharpened. Pretty good for a cleaver that costs less than 10$.

Try the IKEA 365+ 8'' chef's knife, it is actually a really nice knife relative to what it costs.

The cheapestgenuinely good knife you can buy is probably a Fujiwara FKM. This here is an excellent shop:

I can make any knife sharp. It’s more to do with the strength of the steel, it’s resistance to corrosion, ability to hold an edge, weight balance etc etc. a good knife can last a decade so why not spend a measly $150 on something like a wusthof classic ikon? If you want to be a pro then work with the tools of a pro. If you want to fuck around with $3 knives then good for you but I’d rather have better quality steel.
