Yesterday, I added slices of Boczek to a pizza during the last 3 mins in the oven. Obv because I did it on a whim, the slices were not uniform, so only the very thin slices became crisp.

I think I have discovered something. Either manner of doneness was delicious on the pizza. The texture, smokiness and fattiness of the Boczek worked really well against the texture, sweetness and acidity of the pizza.

I declare, Boczek is the new parma ham. Watch this space - you're gonna see it used more often now.

Here's what you do, making pizza is really easy.

Make a good pizza dough, age it in the fridge 3-5 days. Let that shit get to room temp. Preheat oven to 500, and heat a pan on medium-high on the stove. Or high heat if you like really thin pizzas.

Get ur dough thin and circular, rolling pin or by hand it doesn't matter. It expands in the oven so make it about half as thick as you want your pizza.

Put a bit of oil and a bit of butter in the pan. Make sure it's on the sides too and then quickly get your dough in the pan, before the butter burns. Quickly put sauce and cheese and toppings on your 'za and maybe some olive oil, salt, pepper, and parm. Less is better.

Keep an eye on it in the oven. When it's golden / dark brown it's done, usually about 10 minutes or less for a thin one.

Don't have a pic because the wife was ragging about me posting pics on the internet, but my last one came out really nice - thin with some large bubbles. Next time I'll weigh it and take pics.
>1/8 cup 100% hydration sourdough starter
>1.75 cups "00" flour
>.5 tsp salt
>1.25 cups water
>splash of evoo
>mix until forms ball. Stretch and fold every 30 minutes to knead for 3 hours. Form into tight ball and place in an oiled bowl covered with plastic wrap in the fridge for 3 days. Shit is goat, but it is a wet dough, so flour your board well when stretching it out.
