I grew up in northern ontario so everyone in my family were hunters (except me because I'm a faggot) - my favorite venison meal is to velvet strips of meat, brown up some onions at med-high heat (more charred than caramelized), with some spicy mustard on a bun.

It's really quick and simple, and while it's pretty lowbrow as far as meals go, the gaminess of the venison is offset really nicely by the mustard and onions.

I've tried quite a few different meals with venison, from high end to low, and I keep coming back to that simple-ass sandwich. Might be nostalgia desu, but I'm pretty sure it's delicious.

Meat, onions, and mustard on a bun is always good. Some of my friends in WI have so much bird, rabbit, and deer meat that they don't even buy any from the grocery store. Yet it seems to all be a variation of steak n' potatoes, grilled, chili, or steak sandwich.

I'm just seeing if anyone else has any ideas to spice up the mix.

Chicken fried tenderloin medallions are also pretty good. Backstrap makes a good sub for beef in stir fry dishes too.
