That squealing was actually pretty tame compared to the sound of pigs at a real slaughterhouse. Cows can be kept pretty calm, but pigs usually start squealing long before they get into the kill room. I don't know if they suspect what's coming or if they're just annoyed at being herded.

The places I've been to lead the animals to the kill directly from the truck. There are holding pens around, presumably for times when a few trucks arrive at once, but I've never seen them used.
