your brain associates small quantities with things that are more valuable
its kind of backwards logic, from an evolutionary standpoint having more of something should make it more valuable as it sates more of your needs, but scarcity tricks whatever mechanism responsible into appreciating a limited quanitiy of something more than it would appreciate an abundance

if you're used to cold ketchup then have a warm packet it'll taste sweeter
