I'm hesitant to call it a gratin, but it's essentially a salmon and potato gratin. 1/2" thick slices of salmon are layered with thinner slices of potato, then a roux-based white wine and cream sauce with diced shallots is poured over and topped with panko

Sounds like techniquenreally matters on this own. Easy to get overcooked salmon / undercooked potatoes with a very Bland taste as neither cream salmon nor potato offer a sufficient flavor profile relatively speaking. How did it come how? It does sound delicious but also deceptively easy to mess up

Came out well. You do have to pre-cook to potato, I just steamed them till they were almost cooked through. I baked it at 450f for 20 minutes so the salmon didn't hang out in the oven too long, that helps keep it juicy/tender. I made sure to add enough fresh cracked black pepper and also added nutmeg, I see nutmeg used in scalloped potato and macaroni and cheese recipes so it seemed like a good fit. It was delicious but I found myself eating it with frank's hot sauce, so maybe I'd add some cayenne next time

dump chunky potato, onions, capsicum, chicken or meatballs, get some big cans of diced tomato, throw in some extra water, or chicken/beef stock if you want, herb it up and put in some smoked paprika, get it to a boil and simmer for 40 minutes until the potato cook.

Yeah, braise it for 3-4 hours depending on your liquid levels.
Hearts are a bit like octopodes; either fry it really hard for a few seconds or braise it for hours. Anywhere in between and it'll be rubbery.
If you're braising a whole heart you should cram it full of parsley. Goes perfectly with it.
