So I made pan fried chicken thighs yesterday.
The recipe called for smoked paprika but I used just normal paprika, anyway I put a fair amount on but the recipe just called for a little bit.
Anyway I've heard paprika can burn easily and ya my chicken tasted fine just a bit burnt tasting.
They didn't look over cooked or even that dark at all.
Would using smoked paprika have made the end product better? Or maybe less paprika? Or should I add it closer to the end of the cooking process?
Leave it out entirely?

Paprika is the main ingredient in most blackening spice mixes. If it tasted burnt you probably burnt it.

I've used it 2 ways and never noticed a burn taste either way. One, I mix a good amount in the flour. The other way which I feel gives more paprika flavor is sprinkle it on at the end just before I remove from the pan.

this was my whole process
>put some panko in a plastic bag and crush it up a bit (covers the meat better)
>mix whatever seasonings you like into the panko
>whisk 2 eggs
>cover chicken in flour and throw on some of the same seasoning you put in the panko
>dip in eggs
>cover with panko
>in a pan rub some olive oil into a thin layer
>place breaded chicken on pan
>3-4 drips of olive oil on top of each piece of chicken
>425F for 1 hour, turning halfway through
