What are some good stand-alone dishes I can throw chicken breast on to get some extra protein? So far I've got:

Quesadillas & Pizza. Any ideas?

Chicken on rice.

A super simple chicken recipe for this is lemon pesto chicken
-jar of pesto (extra credit if you make your own)
-juice of a few lemons
-package of chicken breasts
-salt and pepper and whatever spice you want. I imagine adding rosemary would be good.
-chicken broth
All in a slowcooker for maybe like 4-6 hours. Spoon a bit of extra broth out for your rice to absorb.

You can use it for sauce n shit, cook it in the sauce, add some potato, carrot, onion, oil, some spices and you can mix it with everything, like rice, spaghetti and all the foods you can imagine that could go well with sauce
