Why is Chinese soy sauce so superior to Japanese soy sauce? I had to pick up some kikomans the other day and now my noodles taste like I mixed the sauce with a caveman's club, Chiniese soy sauce was so much subtler and nuanced.

I never found anything wrong with kikkoman...but I tend to buy that San-J and the low sodium version at that. You can use more soy long before you risk oversalting your food. I also like the ponzu with the bright citrus taste.
