What is the best way to prepare venison? I wanted to make a venison pie but my boomer friend keep telling me that's a waste of the meat.

>> No.11907237

What was that? A tracer round?

>> No.11907240

Well what cuts of meat do you have?

Ground venison you can pretty much treat like ground beef. I used some for taco bowls. Works in chili too. It's just leaner than beef so keep that in mind.

Backstrap is good for breading and frying. Very delicious and I'm sure you could prepare it in other ways but that's how I've always done it.

Tenderloin can be treated much like a pork tenderloin but don't let it dry out.

You're confusing two different things.
A tracer is a burning chemical. Same thing as a road flare, just much smaller.

White phosphorous involves a chemical reaction which precipitates in the air, forming billions of tiny droplets which end up looking like dense white "smoke".

>> No.11907360

>>11907350
It isnt the arrow itself, arrow comes in 4 parts, the head, the shaft, the fletchings, and the nock, all of these parts are interchangeable as well, so a light up nock can be put on basically any shaft.

White phosphorous shells are intended to be used for making smokescreens, either to mark a target so other friendly units can attack it, or so that you can cover your own escape.

It also happens to be flammable so you could use it as an incendiary. It would work against soldiers but it would be useless against a tank. It has no armor penetrating capability and not enough explosive to do much. It's a smokescreen first and an incendiary 2nd.

>breading and frying backstrap

Please don't do this, you can just as easily do the breading and frying thing with cuts from the hindquarters and it doesn't waste the best part of the deer. Better to cut it into sections about 8 inches long and grill or sear those accordingly before you slice them into medallions. It's easier to control the doneness this way, and you get more pink on the inside than turning everything into a 1-inch steak before cooking.

I called you pedantic not because you were incorrect but because you were awkwardly injecting details nobody cares about into the conversation. I made an example of rifle cartridges because while those do consist of several parts it's pretty generally understood in normal conversation what people mean when they talk about tracers.
Much in the same way that nobody here thinks the entire structure of an arrow or bolt is one long LED, most people probably don't think the casing lights up the way the projectile does.
So yes, you were being pedantic because you think archery makes you cool and you're desperate to let everybody know about it.
Not much different from people with certain dietary habits, really.

So as to contribute to the thread at hand, I like making a venison pot. I add the fat from a beef roast and then use either shoulder or hind quarter in a slowcooker. The usual suspects like potato, carrot, onion, celery and the like. Beef fat gives it a little flavor but the venison is the main show. I don't believe in "de-gaming" venison. If you don't like the gamey flavor, just buy beef from your store.

The best ways for doing venison are to treat it the same as a very lean beef, in the way of filet mignon. High heat and cooked fast, possibly with added fat like bacon.
Some good recipes if you're not confident, are Serious Eats Stroganoff, I recommend adding more mustard and some cayenne. (https://www.seriouseats.com/recipes/2015/01/ultimate-beef-stroganof-recipe.html))
or for roasts, open the meat up like a book then stuff with shallots, garlic, thyme, and rosemary all sauteed in butter; season the meat heavily with salt, B.Pepper, cayenne, and smoked paprika, tie closed and roast @ 450F until 110-120F then let rest for 20min. I did this with a full round section a few days ago and it was amazing.

It's not a deer, but I still know what you mean. I know hunters who get rather melancholy after downing a deer or other largish animal.
And I think that's probably a good thing, all in all. They show the beastie they killed some respect. They make very sure they kill it quickly. They use the meat instead of just mounting the head on a wall.
A good hunter acknowledges that he's taking a life when he pulls the trigger or release the arrow etc. and he show's the kill some reverence instead of taking a selfie of him pissing on the corpse, you know?

This.

Technically it might have been a faster kill if you could hit the brain, but that's a much riskier shot. If you miss even a little bit then you've given the animal a non-lethal wound. Heart/lungs is a safer target because even if you miss the heat directly it's still going to be a quick death.

>> No.11910552

It's also highly dependent on the following factors:
>how old was the deer?
>how healthy was the deer?
>what sex was the deer?
>what time of year was the kill?
>what was the deer's diet?
If literally any one of those factors isn't ideal, doing anything other than highly seasoned slow cooked meals is gonna taste like shit.

Not him, but the tenderloins and backstraps will be tender enough to cook with dry heat even if it's a big buck in rut. The front quarters are tough no matter the age or sex of the deer and need to either be ground for sausage, stewed or braised. The hindquarters would show the most variance based on age and sex, but except in extreme circumstances of an old buck in rut, you could slice thinly, marinade and cook over dry heat.
