Also unless you have a specific medical condition, not digesting beans/lentils very well is normal for the first couple of days as your body isn't used to getting enough fiber but goes away after that. You really should pulses and they are very versatile in chilis, dahls, curries, etc. and are very healthy.

A whole food plant based diet packed with leafy greens means you will not be deficient in any vitamin/mineral, except 2. They've done studies on this. You only need to supplement Vitamin D (comes from sun exposure) & B-12 (comes from bacteria not plants or animals). I take a D vitamin once/day and a B-12 once/week.

If you are really concerned just go vegan for a month and then have a general blood test done to see if your levels are okay. I've been vegan for several years and my last bloodwork done a few months ago was fine.

Yellow pea protein powder is easy to digest, and it has all essential amino acids. It's low on methionine, but you can get more of that elsewhere like rice.
Fortified breakfast cereal with all sorts of vitamins is good as a safety net. Make sure you get one with zinc and b12 (i.e. general mills cereals)
Many fortified grain products have a lot iron, so be careful you don't eat too much while you're getting enough of it.
There's at least one algal oil omega 3 supplement with good epa dha ratio out there. Get it.
Make sure you're getting enough calcium from fortified or normal foods. Fortified tofu/cereal/rice drink and yellow pea protein have them.
Otherwise, just have a healthy balanced diet.

You don't need to replace the meat with anything. Just consume extra of the other ingredients. It's a common misconception that you need a high-protein item in your meal. It's nearly impossible to get enough calories without also getting enough protein. You'll become deficient in calories and many other essential nutrients before you ever become protein deficient.
