Tacos are more of a way of eating than a dish made in households, in Mexico there is no day where a family makes tacos as the dish, they instead make a dish (most usually something that does not need a knife to be eaten with) called a guisado, served some tortillas inside some cloth to keep them hot and humid, then each one takes a tortilla, uses the fork to put the food on your plate into the tortilla (beans, rice, meat, vegetables. You also only add enough ingredients for a single bite on the closest part of the tortilla to your mouth) then eat and repeat.

But I suppose that you want the thing Mexicans and chicanos howl about. Tacos as a dish are a quick street-food meant to be prepared by someone else while you eat standing up, they use a lot of specialized equipment that lets them prepare meat in manny ways, asada is grilled with charcoal; adobada is marinated and stained red with spices, stacked as a greek kebab and cooked the same way, tongue and head-meat are kept in steam, sudadero and tripe is boiled and then turned into confite. And usually the meat is cooked, sauces are made and tortillas press and cooked on sight. There is really no quick of making "authentic" tacos yourself, it is possible to make some, but spending so much time on such simple food is a wee bit stupid. There are also "tacos varios" but those are just the street version of household tacos, they have pre-made guisado on Escoffiers, they take a tortilla, add mashed beans, rice and the dish of your choosing and give that to you, the main attraction is always the guisado.

The closest thing Mexicans make to street tacos in their homes is carne asada; Mexican BBQ. take some thinly cut meat marinated in a bit of orange juice, grill it on charcoal, roughly cut it and keep it warm in a pot for people to come and make their own tacos. This is only done for special events, not every day

Ribs, for example, belly, shoulder, etc. Cut into large chunks or cubes and boil in own fat and juices, add lard of respective animal if you have to. Boil until tender. Three keys to authentic tacos:
1. Tortilla- Best tortillas are corn masa mixed with water and lard/crisco, made into balls and pressed into tortilla shape. Extra points for blue corn and hand grinding corn

2. Slaw/ Rice - Slaw is always better than rice for a taco, but the trick is to use onions and carrots in the slaw, and to use a chili powder based vinaigrette and/or aioli.

3. Proteins - season the shit out of it and cook with high heat for a short amount of time. Seafood can be fried or blackened.

Garnishes include lime wedges, cilantro, white onion, cotija cheese, hot peppers of your choice, salsa fresca, salsa verde, etc.

skip the beef

get a $12 pork shoulder or whatever and throw it into a crockpot with literally anything you want, it doesn't matter. Jarritos soda, all of the spices you have, onions, pineapple, orange juice, citrus, lime, sweet stuff, hot stuff, anything.

Leave that bitch on "low" for as long as you can wait. Or less time if you like texture.

Shred. You now have meat for 40 tacos. Toss it in the fridge or freezer.

Make guac. It's an avocado, some garlic, salt, pepper, paprika, red onion, pepper, whatever. Make it how you like it. Just avocado + some basic seasonings and lime juice is still good. Mash it with a fork, because texture is good.


Feeling a taco? turn on your skillet. Warm up a corn tortilla, spoon out your pulled pork directly onto the skillet (reheat + crisp up in pan). Make a mashed pineapple sauce.
