Normally dry-aging is done with a whole carcass, or at least a very large primal cut. The fat on the carcass covers up the meat inside. When you attempt dry-aging with a smaller piece of meat that's been trimmed you need to add a fat covering back to it, otherwise it will all dry out when you try to age it. Coating the meat in butter is an easy way to do this.
