Can somebody recommend some good vegan cookbooks? Or Youtube channels, or blogs?

The lack of responses is telling, isn't it? A good cookbook needs good recipes. There are no good vegan recipes that don't involve a lot of trial and error.
I used to be a vegan as a kid due to dietary restrictions. A recipe similar to this was a main staple in my diet:

Otherwise, Avocados and lintels were my biggest staples. Veganism really limits you, and you need to decide whether you want to either have a less nutrient rich diet that tastes good, or very boring diet that won't turn you into a skeleton. Don't be a vegan if you don't have a medical reason.
