Can you make stew with chicken breast? I want to eat stew but I don't have beef money.

Saute it whole on relatively low heat, add your onions/peppers/garlic etc near the end
Try to time it so it's perfectly cooked
Remove it and rest it
Make your stew with the fond, stock or wine, aromatics, various veges, and a roux if you want it thick
slice the chicken and add it back at the very end before serving
Do not overcook it at the start. There's a very thin margin. It doesn't matter if you go under either, because the pieces you cut that are under can just have a little longer in the gravy at the end.


Obviously chicken thighs are much better as they'll impart more flavour into the dish and are more forgiving to cook, but breast can work, you just have to get the timing right.

Or you could even keep them whole and cut them after you serve.
If they have skin, another thing to do is sear the skin, flip em skin up, delgaze with liquid/veges in your pan to just below the level of the skin and bake it with no lid so the skin crisps up more but the meat braises

Another option for the skin is to take it off, then fry it with some salt, pepper and garlic powder to use as crispy bits to put on the soup as a garnish/ crispy bits later.
