From Central Illinois, the horseshoe sandwich. It’s an open faced sandwich made with Texas toast and topped with meat, French fries, and cheese sauce (and sometimes tomato and green onion). The meat is usually a hamburger, but you can put anything on it really. I like bbq horseshoes with pulled pork.

Bacon and mushroom, I made a thick bechamel with a little cheese and lots of Parsley as gravy.

This is recipe for the knedl from the picture. I know a lot of other types but these are absolute classic.
300g coarse flour
20g fresh yeast
1 egg
150ml milk (semi skimmed)
1tsp salt

Warm up milk until about 30-35 degree celsius, mix in little bit of flour and yeast and set aside/let activate the yeast for about 10 minutes. Then mix in rest of the ingredients. It’s gonna be a bit sticky dough and you have to knead it for at least 15 minutes, 20 minutes is ideal. It’s quite a workout. Set aside and let rise for 1 hour at warm place. Then shape the dough into two logs and be sure you seal the seam completely. Let it rise again for 10 minutes. Then put it in a salted boiling water and boil for 15 minutes. Take out and pierce them with a skewer. Slice and serve with roasted pork belly, sauerkraut and gravy.

As dumb as it sounds, but I almost feel like things like deer sausage would make the cut for Canadian cuisine. It's by no means a food unique to Canada, but it very strongly linked to hunting; which is a super common pastime here. In my mind that imparts a sort of "Canadian-ness" on it. I'd say the same for smoked goldeye.
