Do you think the restaurants just go to shit the moment a camera crew steps in it? What we see are the results of weeks, months, years of complacency, bad service, bad food, and mismanagement. By the time the audition tapes got to the producers, the restaurants were nothing but embers hoping to be rekindled by someone who knows what they're doing. Gordon could show up and redecorate the place, reinvent the menu, and teach the chefs how to cook better and the owners how to manage the finances and crew, but, if they go back to their old failing ways the moment he walks out to do his oh-so-punny outro, there's nothing to do but fail, which a lot of the restaurants did.

The fact that the US version is edited to increase drama and conflict doesn't help, either.

If you're talking about hells kitchen, basically there isn't a very high bar to get on that show. Most of those people haven't cooked in a brigade, and are very not used to the types of dishes being prepared. they are the people call themselves "chef" but they work the line at bennigans or whatever 3 star diner is local.

They have experience, but the producers will occasionally put in burnt/raw food for drama, pick people intentionally to stir the pot (see Jackie, who's only been cooking for 3 months) and Gordon will play things up. There's actually more services that go on than are shown, and the stress they put them under for Reality TV is also a contributor--Unless they win a comp on hell's kitchen, for example, they're stuck in the restaurant the entire time when filming.

I read how difficult it is for French wannabe chefs to get into top restaurants so what they do is go be commis with Ramsay, work ridiculous hours to train then if they're good enough Ramsay hooks them up with Ducasse so sending French speaking promising chefs to Louis XV and shit to get them classically trained as well. They return after working with Ducasse to a sweet promotion like Au Trianon (Ramsay restaurant) current chef talked about this in the French media.

It's reality TV so what they do is they accept a ratio of people they genuinely would consider qualified and the rest are just self-promoting frauds to make it interesting. It's also highly edited to tell a story, they actually have storyboards for these kinds of things in the production rooms like how to imply to the viewer that X chef is bitchy, Y chef is always crying, ect. Nothing is scripted just footage taken over 16hrs a day of shooting and spliced together.

As far as I know, he gained his reputation because of Boiling Point when he was utterly obsessed with gaining three stars and was under immense pressure, so he would flip out for real over the tiniest thing so his dreams and business succeeded. pretty much that. It's all down to the producers of the TV show in question. Compare the US with the UK version of Kitchen Nightmares, for example. Yeah, he swears a lot in the UK version, but it also focuses a lot more on the cooking, team-building, instructional, and positive elements. That stuff is gone in the US version, it's edited for maximum drama instead.

From what I remember this was set in a very difficult time for Ramsay when the restaurant was potentially going under and he was in some dire financial straits. It weighs heavy on your mind, especially on a restaurant competing for Michelin stars. Some of it might be him hamming it up for the TV. When you look at other highly rated kitchens they tend to be fairly quiet and minimal on the angry swearing, so I think Boiling Point and any other time he puts up the angry Ramsay personality is all show and personality.
