Because I think glass is less likely to shatter heating a bunch of liquid than a little fat. If somehow you accidentally have hot fat + water on glass I could see that going badly potentially for the glass.

I think glass would be ideal for reducing sauces though because you would have less risk of browning on the bottom with all that insulation. Seems a material better suited to more liquidy dishes overall to me.

I only use glass for baking pies and biscuits (my go-to biscuit recipe is in a pie dish). I have a glass casserole dish but I really only use it for marinating meat.

Since I invested in a nice set of cast iron pans and a cocotte, I rarely use other cookware on the stove for anything more complex than boiling pasta (I guess you could say I took the iron pill). Even with basic tasks I'd rather use cookware that I know won't chip then shatter as soon as its subjected to heat differentials, which is why I'd never get glass pots and stick to stamped steel.
