Does anybody have a quick tip to cut down the sweetness of carrots when I cook them in anything? They always come out way too fucking sweet for my liking.

1. Quick way - add something sour to counteract sweetness
2. Slow way - ferment carrot to turn sugars into lactic acid

Same way you do with a tomato based sauce. You need to add an acid. Try a little vinegar on them as they cook.
