The taste of any given animal is heavily influenced by it's diet and lifestyle. The plant life of the mesozoic was extremely different from the modern world. Conifers dominated most of the planet and constituted the majority of most dinosaurs diets. A dinosaur would probably taste like chicken soaked with pitch.
