look at what they call chifa. peruvian chinese food. they've had all sorts of asians running their shit forever. they have their traditional dishes but their fusion is the best of beaner food combined with asian food without most of the garbage

but especially in el nino years they are swimming in fresh seafood
you go to trujillo or anywhere on the coast and the seafood literally washes into your hands
it's fresher than fuck and yes you can look at these dishes but looking alone can't show you how nice and fresh these seafoods are.
pic related is the first result on an image search. and it's funny because it shows that stupid gigantic peru corn and their insistence on raw purple onion garnish
but i promise you that fish, if its an el nino year, is absolutely delicious with the citrus in it

in arroz chaufa, the difference, as always, is the freshness of the ingredients, especially where seafood is concerned. what im arguing is that looks aren't everything
