1.5lb stew meat (or flank steak)
1 medium onion
Pepper to taste
2 tbsp olive oil
4 cloves garlic
1/3 cup brown sugar
3/4 cup beef broth
1/2 cup soy sauce
2 tbsp sesame oil
3 tbsp corn starch
3 tbsp water
1 lb brocolli

Put pot to sautee. Add olive oil. When sizzling add raw beef and brown on all sides. Remove from pot once browned. Add onion, sautee for 2 mins, then add garlic and sautee for 1 more minute. Add soy, broth, sugar, sesame oil, pepper and some ground ginger (optional). Add meat back in and pressure cook on high for 15 mins. Once done, do quick pressure release and turn pot to sautee. Make slurry of starch and water and add to pot, let boil to reduce sauce. Meanwhile steam your broc in microwave or wherever. Add to pot once done and serve over rice.

Both are super simple to do and do not require a knife. You can simply loosen a side with a fork then grab ahold with a terry-cloth towel and rip the entire membrane off in one piece.

Only do this with ribs. It will ruin other cuts of meat.

Thanks. There's customers I'll sell it to, but adding things to the menu is glacial and requires the servers to push awareness of the item, especially when it might be unfamiliar. Zosui and ojiya aren't really big restaurant terms for what's basically comfort food made from leftovers. I just keep a personal menu for friends or customers I like.

It's less than ideal, but it makes it a 2 minute prep and reduces my footprint in the kitchen. It's just the egg, anyway. If I made it in my own kitchen, I would poach it properly.

Beer batter is so simple. It's literally just beer and flour. Season it with whatever you like. I used paprika, garlic powder, onion powder, black pepper and fresh parsley I had on hand.

No deep fryer, just a sauce pot with some veg oil on the stove. Did it by feel. Get the oil a little hotter than optimal fry temp and test by dropping some batter in. The temp will drop when you add the fish. Frying up a single portion in a small amount of oil is a difficult balancing act. I guess that's why I was happy with the outcome and took a picture.

I won't use any precise metrics on the times and the amounts, just freestyle it.

Fry some onions. When they're nearly done, add some peppers (they cook more quickly and it's nicer if they have a little crunch) and garlic. Cook for a bit and then add some pinto beans (I'm trying it with black instead next time). Add some hot wings sauce and stir in some paprika, cayenne chili powder, vegetable stock, soy sauce and tomato puree. Add the rice after a couple minutes and stir in and then let it simmer for a while.

I added some ground up mushrooms to mine.
