Soda's great. It provides you as much hydration as water despite the lies you probably fell for about that. It has carbonation which is a pleasant sensation. Like Gatorade it provides electrolytes which is part of why you'll see soda in hospitals for patients on no food diets (better than water where you aren't getting sugar or electrolytes). It has caffeine which is a ridiculously popular and well liked product (more adults in the US than not drink coffee daily). The stimulation is nice and it's one of the safest psychiactives in common use with health benefits like reduced risk of Parkinson's. And between the carbonation and phosphorus Coca-Cola is a successful first-line blockage treatment.

Pretending soda is just OK and not an exceptionally enjoyable drink is similar to when music contrarians try to claim the Beatles weren't a particularly good band. In both cases you have a phenomenon of such absurdly extreme popularity that any explanation denying exceptional quality as a factor will sound more than a little silly.
Think of the market for food and beverages as an ecosystem. And think about the uncountably many different sorts of beverages that have come and gone throughout human history. How many have come close to having as much of a demand as the demand for soda? There were all sorts of drinks that could have caught on at the time soda did. But it was soda that everyone latched onto and it's been soda that's blown up into an insane worldwide need.
Coca-Cola was literally and unequivocally selected by the Invisible Hand of the Free Market as more valuable and in greater demand than malaria pills and other basic medical supplies, which is why it was only well after Coca-Cola already had extensive distribution networks established through the least developed / least accessible regions of sub-Saharan Africa that malaria pills and medical supplies began reaching those populations. And we know the limiting factor before was only the lack of distribution network because they ended up relying on Coca-Cola to deliver those medical supplies.

Anyway though I think your main problem here is soda's been so wildly well liked and successful that it's easy to take it for granted. You don't notice its extraordinary appeal because that same appeal turned it into one of the most familiar and mundane seeming products you encounter on an everyday basis. You have to take a step back and dissociate yourself a bit from that familiarity to realize how extraordinary it really is. There isn't any food or drink you could ever personally invent that would reach even 1% of the desirability soda has. It's basically the end result to human history's repeated distilling of the concept of enjoyable taste. What people really want to drink is what molded soda into existence.

At best that's just a potentially repulsive attribute that the actual attractiveness of a commodity could overpower. By analogy you don't like a film because "I don't care about the plot."
