A lot of these people are from flyover states where fine dining consists a steak and potato menu and a variation of creme brulee at the nearest casino. Most decent sized cities you can find plenty fine dining establishments that serve 5-6 course menus for well under $100. It's not a matter of cost as the same people will spend a couple hundred a week on the same shitty fast food every day. It's mostly just uneducated rednecks afraid of the unfamiliar. The cure? Complete segregation from flyovers.

I've never met a person who was still hungry after a 12 course meal. Some courses are small, some are slightly bigger, at the end you'll most likely be full but not feeling like exploding, a good full feeling.
It would be way easier for the chef to just dump 4 lbs of fried rice in front of you and stare at you until you finish it but that's not the point.
You'll be enjoying a bunch of different dishes with pairings and every thing complimenting each other. High quality ingredients will be used and the dishes will be thoughtful and well balanced.
