Sriracha isn't too strong, has a heavy garlic flavor on top of the spice, and goes well with a lot of things. Pico Pica is a good all-purpose sauce you can find in plenty of grocery stores and has more of a Mexican flavor. If you like it more Eastern, sambal oolek is a chili garlic paste that's pretty versatile.

You make a good point, though. Some foods will complement one type of sauce, others foods may take another. If you're only keeping around 1 type of sauce at a time you probably want to go with something milder and a little more palatable, otherwise get small bottles of 2-3 varieties and play mix and match with your foods to learn what goes best with what.

I asked my girl friend to get me a bottle of original tabasco sauce when she went shopping today. She came back with tabasco chipotle style, which I have never tried. Turns out it is basically fucking bbq sauce. Needless to say, I am very disappointed. Why would anyone choose this bullshit over the original.
