I'd imagine it's because veganism has become part of a broader trend in society of people assigning themselves as many labels as possible in order to give themselves a feeling of belonging and identity. It annoys people because it comes across as artificial and pretentious, and also fractures society into endless groups and subgroups instead of uniting people. Vegans are especially guilty of this because eating together is one of the most ancient social conventions that bind people together. If it were just a simple case of some people having specific diets though it probably wouldn't be too big of a deal, but it's the grandstanding moralising and contrived nature and behavior of people who call themselves vegans that causes trouble.
