Never understood why vegans and vegetarians would want meat-inspired food to begin with. I mean, the whole point for vegans is to eat foods that are not related to animals in any way, so why try to turn tofu into chicken wings? Because enough vegans are only vegan for performative reasons and lack a dedicated moral opposition or medical reason for not eating meat products that an entire industry exists to cater to them. Anecdotal, but I know two people who can't eat meat because of enzyme disorders and neither of them have the slightest interest in fake meat products.
