What's the best dish you've ever had while travelling?

So far mine's gotta be Laksa I had while I was in Singapore last year. It's fucking top-tier

A well traveled person might find it hard to narrow it down to one single thing.

I can count on two hands extremely good meals at top rated restaurants as well as just great food done right in cultural restaurants, fun wine festival experiences, and some top street food, but only one dish? No. I just couldn't say. I could say it isn't Laksa for sure though, though homey soups are amazing, I'm going to put nearly every soup in Mexico ahead of Laksa, and nothing over a really good mole baked over falling apart on the bone tender chicken.

Sticky rice cooked to a sweet coconut custard like texture with hint of smoke cooked over a fire in bamboo is right up there with some of the best street food. Khao lam. Using the split off bamboo as a clean utensil to section off little candy like coins of it, adds to the fun. But, it's no Hungarian langos dough right out of the fryer, rubbed with far too much hot raw garlic slices and sour cream.

When I went to visit relatives in bumfuck nowhere at some rural chinese village in china. There was an open restaurant style noodle place where you eat noodle soup in metal bowls, shit was so simple and delicious, thick rice noodles, some sort of chicken based broth, some chilli, onions, crushed peanuts, cilantro, and ground pork meat stir fried with pickled veggies.

i literally just went there yesterday. it was pretty good for thai in the US but not the best anything.

strangely their guay tiew kua gai is a clay pot dish (both on the menu and serving). it makes zero sense since it's never cooked that way (it's a very simple stir fry) and they clearly didn't either. it also wasn't charred enough and lacked the standard squid. the egg custard on sticky rice was great though.
