This might sound dumb but here goes. People like bacon on their burgs. Why don't people just chop/grind up uncooked bacon and mix it into their ground beef mixture before cooking so the bacon flavor incorporates throughout?

Because the bits on the exterior of the patty have a tendency to burn and become unpleasant faster than the beef.

Because I want the taste to change slowly as I bite into something and chew, not taste like I put a cheeseburger in a blender.

I tried it once and it just wasn't right. I thought he bacon mince toughened the burger mouthfeel overall. Mind you, I was using home ground chuck with an 80/20 lean to fat and my home cured bacon so the quality of the ingredients was very good.

grinding stuff up and mixing it into a mush has a different effect to cooking the stuff separately and eating it together.

the bacon you get in a burger is much more well browned and crispy than it would be if mixed into a patty. people generally don't want their bacon to be soggy and pale.

there's nothing wrong with adding it, it can help to boost the savouriness of the burger and add some smokey flavour, but if you want the distinct and familiar flavour of cooked bacon you might want to cook it in the traditional way.

Some restaurants do that, but for the average person making burgers at home they don't have a grinder and don't want to bother chopping it manually. More people probably mix plain ground pork with beef for burgers if they want to do something like that.

I've seen it done before.

I don't do it because the cooking time of bacon doesn't match the cooking time of the patty. Bcause their ideal cooking times are different, cook them separately and combine them on the burger. That goes for most things people like to mix into patties.
