Why dont people use some kind of sealed device to pressurize a container with CO2 while dough is inside ?

I'm assuming it would never permeate the dough as evenly. Also, the time required to depressurize without it collapsing would probably nullify possible advantages.
That besides the higher amount of CO2 that this process would end up throwing into the atmosphere. They'd have to keep it real quiet if they want to prevent some outrage/boycott.

It would have to be pretty complex to leaven dough in the same way, it's a lot harder than carbonating a liquid. It's a lot easier and more efficient to just whip egg whites or using baking soda/yeast, there's just no demand for a device like that.

In order to keep the bubbles in the dough, you would have to cook it while at pressure with CO2. It's do-able, but now you have a CO2 tank pressurizing what has to be an electric oven (as the CO2 would/could extinguish a natural gas flame at a high enough concentration to inflate dough). The oven would have to be able to take pressure, as you're not only pressurizing it before heating, but increasing pressure as you heat, basically making a dry pressure cooker.

Or you could add a teaspoon of a readily available powder, or a tablespoon of yeast to some warm water, and let these things work their magic from inside the dough before/while it cooks.

It's a neat concept, but not overly useful when similar results can be achieved with a self-replicating organism, and powdered industrial waste.
