mutton curry was a staple of my childhood growing up with parents from the west bengal region of india, but ive been cooking lamb curry with chopped lamb and well prepared garam masala curry. im not sure about you but i like it, i like how lamb takes the ginger and cardamom well

That's pretty neat.
I dont really have a name for this but I take large cubes goat meat and simmer it in ghee until it's browned on each side but tender in the center then add a dry vindaloo spice blend. Toss it a few minutes to let the spice warm then pot it under the broiler to let it all crisp on top but stop before anything burns. It's been my preferred way of making goat for a while.

i do this exact same thing but i use garam masala blends, kashmiri style or paki style tbhonest. sometimes vindalo. goat works well with some vindaloo it absorbs it well. i made some with aloo (this is the word for potato) and bhodsikey (word for cardamom sticks) to cook in the crock pot. really helps, i love that goddamn crock pot.
