The rouladen were standard thin cut beef, bacon, pickles and mustard (no onions). I had them simmer in a mix of vegetable and beef broth. I added a thime and a finely cubed onion at the beginning which made the gravy even richer. At the end i added garlic because i didnt know wether my mother would eat the gravy too.

I like trifle and my mum always makes one when she knows I'm coming around, she always makes it the same way and I love it.

One Christmas I'd just arrived, said I was looking forward to having trifle later and then say "I saw this TV chef do a rubbish trifle recipe the other day, it didn't even have any jelly". This is the 'rubbish' TV chef, luxury, Jelly free recipe

There are much easier ways to make trifle though:

Make some strawberry jelly/jello, suspend some fruits in it (any fruit that doesn't prevent the jelly from setting, I like mandarin segments the best) , put it in the fridge.

When it's getting syrupy but not quite set, get some sponge fingers (or you can use plain sponge cake if you can't get that), pour some sherry on it so it soaks it up and place on top of the partially set jelly so it soaks up some of the jelly but the Sherry doesn't leak out and stop it setting

if you're not adding booze, you can just put the sponge in as soon as the jelly is made so it completely soaks in the pre-set jelly.

Once the jelly is set, make a proper setting custard, when it's cool enough, spoon on top of the sponge layer and leave to set.

Make some light whipped cream (don't use it out a can), spread on top once the custard has set.

Top with sprinkles or chocolate flakes.

Yorkshire puddings (despite the name, they're savory and served with a roast):

>Make a batter mix (basically American pancake mix but not sweetened at all) .
>Use a cupcake tray, in each dimple, put about 1cm of oil. Stick that in the oven at 230c until the oil is very hot.
>Take the hot tray out the oven, pour in the batter mix, it shouldn't be near overflowing (the mixture will rise a lot) and you should have a thing amount of oil surrounding the blob of batter..
>Stick in the oven for 20-25 minutes until they're brown and have risen into a bowl shape. Do not open the oven door until it's cooked.

Pic is what to expect, can take a bit of practice. Most common issue is the oil or oven not being hot enough which will result in something closer to a sponge than a think crisp yorkshire.

I always cheat and use a packet mix for bread sauce but the BBC recipes are usually good:

It's a creamy sauce with a light flavour that goes really well with milder meats like turkey

Not that anon but for my Apple pie I just downed over the course of two nights was as follows
315 grams AP flour
1 stick (113 grams) butter (chilled)
113 grams veg shortening (also recommended to be chilled but not necessarily)
1 teaspoon of salt
1 bowl of water with a few ice cubes on it about 237 grams

I cut the fats and flour with a fork until crumbly then mix in the water and salt mix until it comes together with fat deposits. I split in two that and roll out half to par bake at 450F for 20-30 minutes judging by color you don't want golden brown yet but just until it begins to get brown is what you want.
While that's baking I make the filling, I slice and decore 2 honey crisp appels on a mandolin
2 teaspoons of peppermint leaves (dried and crushed)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
70 grams of sugar
104 grams of appel cider (the fresh stuff sold chilled and seasonally from honey crisp appels preferably)
I let everything sit until the bottom crust is cooked and cooled then I fill it up and roll out the top crust I don't do lattice but here would be the step to cut the strips and lay it out, bake at 450F for 40 minutes and let cool and set. I take any leftover filling I have which is usually half a cup or so and cook it on low heat with 70 grams of Brandy and more peppermint
leaf until it's thick and Carmel like then I thin it out with butter until it flows usually 1/4 of a stick but I just eyeball it. I'll serve the pie with that as a sauce either on the pie or a la mode and that on the ice cream

This christmas actually went perfectly. Spent christmas eve with my wife's mother and family, had a good dinner, then we spent christmas day at my Dad's place with him, his new wife, and my brother and his girlfriend. Good food, good drink, a happy time had by all, and then me and my wife had friends over for boxing day which we spent drinking in our giant inflatable pool we got from K-Mart.

Most of my christmas days over the last decade have involved me either getting drunk and ruining everything/getting fucked up on drugs and ruining everything/some combination of the above and being hospitalised as a result/or doing nothing by myself.

This was a genuinely perfect christmas for me.

The funny/absurd thing is, that I was on this random bar on Christmas eve with few of my buddies and one guy who was admitted to mental hospita same time as me last year was there too - just before midnight his sister had called the cops and the cops took him from the bar back to the looney bin. I did not talk to him but thought it was a bummer that they came for him on Christmas Eve and he is locked up now again. Then again, I overheard some of the conversation from the table and he was really fucked up talking really strange shit, so I do not wonder that he was forcefully taken there again.

I don't have any proper mental illness diagnosed and the only pills I am given are sleeping pills. Most of my bad episodes are after I have slept like 4-5 hours whole week.
