There's an episode of Mega Food on netflix that is on the subject of airline food.

It's actually super interesting how they make it. Basically, there are a lot more considerations than you would think when they design the menus. Considerations like allergens, being economical with the space it takes up, easy to reaheat and serve, local tastes and customs, food that is too smelly could be an inconvenience, etc. They also have to prepare A LOT of it, individually packaged, and transport it from the cooking/prep facility onto the actual plane... and all sorts of other stuff.

That show MEGA FOOD is actually a really cool show.

I find that third world countries typically have nicer airplanes due to how recently the planes have been refurbished, as well as most of the people consider they will only ride a plane once in their life, so the experience is highly regarded. Results in good (read better, not actually good) meals, quality flight attendants, less stress and hassle.
