Most restaurants probably use as little seasoning as possible because those who like a lot can season it themselves at the table while those who like little to no seasoning can't do anything to remove whatever the cooks use.

This is a low grade argument lacking in intellect and devoid of proper thought. It's completely reasonable to assume that through sophistication, trial and error, and previous eating experiences, that one can easily assess a plate of food even before consumption and by sight alone, and can quite easily deduce the amount of salt and pepper required for his/her particular taste. The confirmation of this is the simple fact that people who salt & pepper their food beforehand, keep on doing so. Surely if they were over-salting or over-peppering their food, they'd stop this behavior. Which again, can only lead one to believe that they're quite accurate in their assessment and deduction at their proper salting and peppering requirements, and thus making the OPs argument completely null and void.
