Pretty much this. The restaurant system is a damned failure and most independents fail with the rest making well under 10% profit margin. If they paid employees fair wage even more would collapse.

The only ones who would survive are dipshit chain restaurants and small diners because people just will not spend more on their meal.

Nope. They've been doing this shit for so long that there's a special legal exemption for tipped employees.

Employers have to pay them up to minimum wage if tips don't cover the gap, but that never happens. In fact in a lot of restaurants some of the servers make more than some of the chef positions (and I don't mean the line cooks). The tipping system needs to stop.
