Yeah, a vacuum sealer is really useful, but you're also going to need an immersion circulator if you want to cook anything sous vide.

I have one, and a 600$ vacuum sealer. Yes you should do it-and compare results cooking low fat proteins. I’m making chicken thigh tacos now. Takes 45 mins. Can make 6 lbs if you want and re freeze after it’s cooked. I also vacuum sealed some apple slices in cheap aldi wine for the Chicago bears game.
