I'm a big fan of egg salad. I don't have any set recipes, though: I use whatever's to hand and experiment with each batch. I've added horseradish, mustard, pickles, garlic, onion, and nutmeg in various batches, and all were great.

I really like gas station/grocery store/vending machine egg salad sandwiches that come in the triangle box. They're really overpriced, and kind of trash, and yet for some reason I've never really developed my own favorite egg salad recipe, and I cook for a living.

Maybe I'll make this next weeks goal, though I'll probably just get drunk and forget.

The only good egg salad is diced boiled egg mixed with mayonnaise. Put it on a sandwich. It's nice. Anything else called an egg salad is weird and vaguely unpleasant. Guaranteed.

That's not to say egg can't be in other salads. Sliced egg in a caeser salad is quite nice. I'm talking about salads called egg salads.

Theres only one way to make Egg Salad right, keep it simple but tasteful.

My go: light amount of mayo, plenty of salt, not too much pepper, a good amount of bacon crumbs and a little bacon grease slapped on FRESH lettuce and oatmeal bread ( double stacked ).

I use everything you'd put in a deviled egg in my egg salad. Eggs, mayo, sweet pickle relish, celery salt, and paprika. Sometimes mustard. I never measure anything just mix and taste until its right

toss in a tablespoon of dijon mustard, otherwise prepare the bog standard 1950s version.

Martha Stewart has a version where she cooks 10 eggs, using only 2 yolks and replaces the egg fat with avocado mush.

It would be fun to ironically serve it as Boomer Interpretation of Zoomer Avocado Toast.
