Made this a while back with a few minor modifications. It was pretty good.

What changes did you make? I’d do it all in an enamaled cast iron dutch oven so I can get that fond, and finish it in the oven at 300 F.

I don't remember the details. Fairly minor stuff like more wine and less stock I guess. And the pearl onions were pickled, which still works very nicely.
Definitely ended up with more liquid than the recipe calls for, but I'm not complaining.

I imagine most food in the Deus Ex (and other cyberpunk) universe to be frankenstein fake meat soy abominations with most of the animal proteins coming from insects, eels, spiders, transgenic lab monstrosities ("greasels") or cloned stem cell vat meat like the impossible burger. Also nanomachines that directly stimulate your taste buds and also give you gray death if you're on Bob Page's shitlist.
