Somewhat related, when making an egg sandwich, I always spread the beaten eggs across the entire surface of the pan, like I’m starting an omelet, except let it cook slightly longer, then add whatever else I want on it (chives, cheese, veggies), then fold the “sheet” of cooked egg twice, creating perfectly cooked layers of egg. Great texture, every time.
